Carbonic Maceration Honey Process : The process, involves coffee fermentation in a sealed, oxygen free co2 rich environment. Coffee cherries are pulped and dried with the mucilage intact on the parchment as they dry resulting in enhanced bruit fruity favours. This innovative method brings out unique complexity and clarity in the cup.
