What is Honey process coffee ?

Traditional honey process coffee is made by removing the outer skin of the coffee cherry and drying the bean with part of its natural fruit layer (mucilage) still attached. This sticky layer slowly dries on the bean, allowing natural sugars to influence flavor, resulting in a cup that is sweeter and fuller than washed coffee but cleaner and more balanced than natural processed coffee.

Typical flavor notes: Depending on how much mucilage is left, honey processed coffees often show notes of sweet caramel, ripe fruit and smooth acidity making them approachable for everyday drinkers while still offering the depth and complexity
