What is Honey process coffee ?

Ripe coffee cherries are depulped to remove the outer skin, but some or all of the sticky mucilage (“honey”) is intentionally left on the parchment. The coffee is then slow-dried on raised beds or patios, where the sugars in the mucilage ferment naturally while drying. After reaching the target moisture, the dried parchment is hulled to remove the remaining layers.

Typical flavor notes: Depending on how much mucilage is left, honey processed coffees often show notes of sweet caramel, ripe fruit and smooth acidity making them approachable for everyday drinkers while still offering the depth and complexity and a cleaner cup than naturals but sweeter than washed coffees.
